Costco Keto Meal Prep Hack:

Make the keto meal suggested for keto dinner and make extra for the next day’s keto lunch.

Keto Meal Prep Example:

Monday Dinner – Keto Chicken Fingers

Tuesday Lunch – Keto Chicken Fingers

Tuesday Dinner – Keto Fish Bake

Wednesday Lunch – Keto Fish Bake (if it is not too stinky at work – lol)

Wednesday Dinner – Steaks

…etc…

Keto At Costco Shopping List:

  • Organic Chicken
  • Pork Panko or Pork Rinds
  • Parmesan cheese
  • Eggs
  • Bacon
  • Fish of your choice
  • Basil Pesto
  • NY Strip steaks or Ribeye
  • Grass-fed ground beef or hamburger shaped ground beef patties
  • Guacamole cups
  • Organic Spinach

Low Carb & Keto Sides:

Ideally, you have two cups of organic spinach or organic romaine lettuce with each meal for potassium as your side.

My keto salad dressing is 3 parts olive oil or avocado oil to 1 part apple cider vinegar. YUM!

Costco Keto Meal Recipes:

Keto Chicken Fingers:

Ingredients:

  • 1 lb of Organic Chicken
  • 1/2 cup Pork Panko or Pork Rinds (I prefer Pork Panko due to crispy-ness factor. Much more crispy using Pork Panko)
  • 1/2 cup Parmesan cheese
  • 3 Eggs
  • Bacon Grease – I simply use leftover from cooking a pack of bacon. Or, you can use your Southern Bacon Grease Jar that sits on the counter.
  • I love Primal dressings to dip my chicken fingers into without inflammatory ingredients or puffery.

Directions:

  • Cut your organic chicken into 1 inch x 1 inch pieces.
  • Mix your Pork Panko or Parm together into a dry ingredients bowl.
  • Crack your eggs into separate bowl and whisk them together.
  • Heat up your bacon grease frying pan to medium heat.
  • Take your chicken and dip into egg wash. Then dip chicken piece into dry ingredients. Finally, put into frying pan.
  • Cook on one side for 2-3 minutes and flip.
  • Your fried keto chicken fingers should be crispy!
  • Dip with ranch or blue cheese. I love Primal dressings to prevent inflammatory, puffy ingredients.

Keto Fish Bake:

Ingredients:

  • 1 lb of fish of your choice
  • Basil Pesto
  • 1/2 cup Pork Panko or Pork Rinds (I prefer Pork Panko due to crispy-ness factor. Much more crispy using Pork Panko)
  • 1/2 cup Parmesan cheese
  • 3 Eggs
  • Olive oil or avocado oil

Directions:

  • Heat oven to 400 degrees.
  • Cut your fish into 3-4 inch x 3-4 inch pieces
  • Coat bottom of square pan with olive oil or avocado oil.
  • Put fish into pan.
  • Use 1/2 tablespoon to cover each piece of fish.
  • Sprinkle 1/8 cup of Pork Panko and Parm cheese mixture on top.
  • Cook for 12-17 minutes depending on the thickness of your fish.
  • Once fish is cooked, put on high broiler setting for 2 minutes to make coating crispy.
  • Bon appetit!
