Buffalo Chicken- Keto Meal Prep

Here is a super easy Keto meal prep recipe for you to try. The way to keep my delicious Buffalo Chicken recipe and keto friendly is to use Primal Mayonnaise. With the help of an Instant Pot, these recipes are a snap!

Low Carb Buffalo Chicken

This is awesome Buffalo Chicken. It is really easy to make and tastes so amazing over spinach or wrapped in romaine lettuce! Did you know that spinach actually has more potassium than bananas? I did want to mention that when you make this recipe, you will want to make sure the hot sauce you use doesn’t have sugar. It’s very important to read the labels to ensure you are keeping it keto. Additionally, be sure that the mayonnaise you are using doesn’t have soy bean oil as it is not keto approved.

What is so great about this recipe is that you can make this in your Instant Pot! ( Tip – Save the broth after you make your chicken. You can use it later for other meal preps). If you buy all your meat in bulk, you can freeze it until you are ready to use it. Just thaw it in the fridge over night, and you will be ready to go. Remember that organic or grass fed are always best, but get what works best for your budget.

Keto Buffalo Chicken Ingredients

-1 cup Primal Mayonnaise (or mayonnaise of choice)

-1 tablespoon of Italian seasoning

-4 organic chicken breasts (your brand of choice)

-1 tablespoon of pink salt

-1 cup of water

-Approximately 10 squirts of hot sauce (season to taste)

-1 cup cream cheese

Buffalo Chicken Directions:

-Add chicken breast, pink salt, Italian seasoning and water to your Instant Pot.

-Set Instant Pot to Pressure Cook on high pressure setting for 15 minutes. (Tip – if your meat is still frozen you may need to adjust time accordingly)

-Once the meat is cooked you will want to let it sit for 10 minutes before releasing the vent valve. (If your meat was frozen you will want to let it sit for about 20 minutes)

-Drain chicken and put in bowl. (Tip – save the stock in mason jars to use later in other recipes!)

-Shred chicken in bowl.

-Add hot sauce, cream cheese and Primal Mayonnaise and stir.

– Serve with romaine lettuce leaf or over bed of spinach.
