SALT AND VINEGAR ALMONDS
You can quickly make a homemade batch of salt and vinegar almonds for a low carb snack or keto snack. This keto recipe is very easy & will help with any salt cravings you have.
Secret Salt Ingredient – The pocket sized Redmond Real Salt based out of Utah. Hold your pearls as this salt tastes different and adds better texture than other salts I’ve tried.
3.1 net carbs = 1/4 cup of salt & vinegar keto almonds
Countess Note: The store bought salt & vinegar almonds sadly have partially hydrogenated oil, which is not good for us. The taste does vary from the store brand, but I like it just as much knowing it contains healthy ingredients.
Update FEB 2020: I highly recommend using the Redmond Real Salt as it makes the recipe taste even better! The flakes are also great for intermittent fasting.
Ingredients For Salt & Vinegar Keto Almonds:
(Update: I now buy Target’s 64 ounce Apple Cider Vinegar to be cost efficient.)
2 tablespoons of Redmond Real Salt
Have extra Redmond Real Salt to sprinkle at the end for desired flavor
2 cups of almonds (raw or natural)
1 cup of Apple Cider Vinegar
A spray bottle to mist vinegar
Parchment paper or wax paper
A cookie sheet
Directions For Keto Almonds:
-Put 2 cups of almonds into a bowl.
-Add 1 cup of Apple Cider Vinegar.
(Update: Use the bulk jug of Target’s 64 ounce Apple Cider Vinegar to be cost efficient.)
Let the almonds soak in the Apple Cider Vinegar for 1 hour.
-Preheat your oven to 350 degrees.
-Drain the vinegar from the bowl after the almonds have soaked for an hour.
-Put a piece of parchment paper or wax paper on a cookie sheet.
-Spread soaked vinegar almonds onto the cookie sheet.
-Sprinkle 2 tablespoons of Redmond Real Salt over the almonds.
-Cook the almonds in the 350 degree oven for 20-30 minutes.
-Pull the almonds out of the oven and let cool.
-Mix Redmond Real Salt around on the almonds.
-Use spray bottle mister to mist extra vinegar onto almonds. (I usually mist once, let sit for 10 minutes and mist a second time for extra vinegar-y taste.)
-Add extra Redmond Real Salt if you would like.

I like to store these in glass, air tight containers. They last for one week…if we don’t eat them all by the end!
I do sometimes put the almonds in the fridge to ensure freshness as well.
Measure out your almonds into 1/4 cup serving sizes.
1/4 cup servings for 2.5 net carbs per serving.
